#FeatureFriday – Caleen: Chasing her cake dreams

   Category: Alpha, Feature Friday |

It’s April! How are your New Year’s resolutions coming along? Have you forgotten all about them or are you fervently ticking them off one by one? Meet Caleen, owner of ProjectKitchenLust, and our Featured Alpha of the month who’s on the way to making her dreams come true! Flying off to Sydney to study Culinary at Le Cordon Bleu in a matter of hours, let’s find out more about her move and what ignited her passion for baking!

Feature Friday Creative (Working copy) - CALEEN

1. Hey Caleen, how’s everything and how’s packing for your move to Sydney coming along?

Hello everybody!

2
2015 was a crazy cake ride with me deciding to quit my stable full-time job and diving into full-time baking with the flexibility of travelling before I fully committed myself to baking in Sydney.

3
2016 has started with a big bang for me with the overwhelming response for CNY Pineapple Tarts order (@projectkitchenlust) which I am really thankful for. Thank you for indirectly supporting my “SEND CALEEN TO LE CORDON BLEU” fund! HAHA!

After all the mad baking of CNY tarts, it boiled down to settling some documentation like Visa and spending quality time with family, loved ones and our dearest dogs (which I will definitely miss the most).

2. What are you going to miss most about Singapore?

My dogs and food for sure! If you follow me on my social platforms, you would notice I really love to eat. When I don’t bake, I cook and if I don’t cook, I will travel around for food.

3. And how about the top 3 local delights (you’re gonna miss)? 😀

  • Bar Chor Mee
  • Chicken Rice
  • Ban Mian

4. We love your baking creations! How did you get started and what ignited that baking passion in you?

It started way back when I was in my last year of university which got me thinking about what I really wanted to do when I graduate. My love for baking was ignited when I was studying in Temasek Polytechnic – Food Science & Nutrition. There was a Food Catering module that I really enjoyed a lot and I remembered baking my first bread, focaccia, which I thought was the best bread ever.

I started my baking adventures since then and never looked back.

4

Anyway back to the topic, I decided to start baking online (when I was still studying) to “test the market” and to see if I can really see myself doing this long term. How great would it be if I can combine passion and career together?

After baking “commercially” for around 4 years, I really wish I could take it to the next level and therefore I enrolled myself into Le Cordon Bleu.

5. What do you hope to achieve from studying culinary at Le Cordon Bleu?

Back to the basics, but this time round, understanding the foundation well and refining my skills. This will definitely help me in creating my dream cakes.

And with me studying in Sydney, I hope I can be exposed to the F&B culture there and be pushed a little further.

6. What inspired you to quit your day job and focus on your baking business, ProjectKitchenLust? Any setbacks experienced and tips for the budding baker & entrepreneur?

It was really tough juggling a full-time job and part-time baking career. I was physically tired all the time. I had no personal time and no time to travel (my cooking and baking are inspired through my travelling). I felt drained, so that’s when I knew I needed to take a leap of faith and give up on something.

5

To be honest, I am not a risk-taker. I believe in 70% hardwork and 30% faith. I have worked out a plan in terms of how to manage and market my baking as well as doing some financial planning to make my full-time baking sustainable.

And with faith, it will help you through times when you are having down moments. Faith makes thing possible. Faith is a strange yet powerful thing and I will always remember this sentence whenever I think I can’t make it, and for those who are struggling, this is for you:

“if you have faith as a mustard seed, you will say to this mountain, move from here to there, and it will move; and nothing will be impossible for you” – Matthew 17:20, Luke 17:6

In short, give all your best and let God.

7. What’s going to happen to Pupu & Sox when you’re overseas? :(

6

SIGH, I am so going to miss them! My mum and my boyfriend will be taking good care of them. I am going to facetime my dogs when I am in Sydney. *cries*

8. Aside from studying at Le Cordon Bleu, what are you most looking forward to in Syndey!

CAFÉ-HOPPING in Sydney! Exploring their well-diversified food culture like Asian fusion food. Exploring different parts of Australia too!

9. We know you’re a huge foodie! Share with us some of the best street food you had through your food & travel adventures!

To be honest, it will be a long list! Oops! But let me share with you my top favourites.
